The cellar

Our  material is worthy of the greatest « Châteaux » of Bordeaux: cold storage, sorting tables, process by gravity, vertical presses, concrete tanks of small capacity ... We do everything to preserve the integrity of the harvest, to protect its aromas and to prevent oxidation phenomena.

In our cellar, the traditionnal know-how matches perfectly the french mastery…

The aging of our whites wines last 4 months and the red one 15 months. We bottle them at the end of winter.

The fermentation and aging of our great vintages (Epicuria Chardonnay, Cabernet Sauvignon, Syrah) take place in barrels made of french oak.
